With my Italian roots, I had to have an Italian Lunch Box! I love all Mediterranean food, and this healthy lunch box reminds me of the sunny Italian summers, with the smell of fresh basil and pesto!

Ingredients:

  • A fresh mozzarella
  • A couple of fresh tomatoes
  • Basil
  • Pesto
  • Pinenuts
  • Green and black olives
  • Dressing: extra virgin olive oil, balsamic vinegar, salt, and pepper
  • A toasted slice of bread
  • Red and green grapes

What do you pack in a lunch box?

Food in your lunch box should be easy and simple to prepare. You also need to make sure you pick food that will store well. No one wants a soggy salad or a sad-looking sandwich!

In my experience, these are the best types of food that are the perfect foods to use:

  • Fruit: always go for fresh fruit! Pick fruit that can last a few days stored in the fridge, and go for seasonal as much as possible (to help you save money). Apples are a great choice. I also love fresh grapes and berries!
  • Vegetables: opt for vegetables that are quick and easy to prepare, such as cherry tomatoes, carrot sticks, celery, and cucumber.
  • Rice, noodles, couscous, quinoa, and pasta: I prefer to go for brown rice and wholemeal pasta to add more fiber to my diet!
  • Legumes: a great source of fiber and great to fill you up. Legumes are perfect for your lunch box – chickpeas, lentils, beans are all great!
  • Cheese and yogurt: cheese like fresh mozzarella or a chunk of parmesan are great for energy and easy to prepare. Yogurt is great if you love a sweet alternative for your lunch!
  • Dips and nut butter: dips like hummus are a great addition to a healthy lunch. Rich in protein, they are perfect eaten with carrot and celery sticks and take no time to prepare. Peanut butter and almond butter are also great with sliced apples!
  • Chicken And boiled eggs: easy to prepare and a great source of protein.
  • Bread and crackers: I know many people these days prefer a low-carb diet, but I love to include a fresh slice of bread or focaccia in my lunch box. Crackers, pita bread, and rice cakes are great too!
  • Dry nuts: almonds, walnuts, cashew nuts, etc., are a great source of healthy fats and protein and are perfect for grazing while you start to feel hungry.
  • Dark chocolate: I know I am talking about healthy lunch ideas! But who doesn’t need a boost of energy in the afternoon? You can add a couple of pieces of dark chocolate to your lunch box for that much-needed sweet treat!

Pack more fruit and veggies in your lunch box. This will help you lower your calories, eat less saturated fat, and have a much more balanced diet!

3. Use leftovers

If you don’t want to set time aside to prepare your homemade lunches, one of the best tricks that will save you time and money is to make a double portion of your dinner and use it as lunch as well!

4. Make enough for a couple of meals

If you don’t want to cook too many different recipes, make enough food for a couple of lunch boxes. This will help you to save time!

5. Cook in a batch on Sunday

If you don’t like the idea of leftovers, try to make ahead a big batch of lunch boxes on Sunday. You can meal prep all your lunches for the week and either refrigerate or freeze them. Then, just grab your lunch box in the morning, and go to work!

If cooking in a batch isn’t for you, but you want to optimize time in the kitchen, prepare your lunch box the evening before while you are cooking dinner. You already have all your essentials out (like chopping board and knife), and you can save on washing up time!

My favorite containers for healthy lunch boxes are made of glass. I prefer them to plastic containers for several reasons:

  • You can see what’s in them easily.
  • You can use them in microwaves.
  • They won’t alter the taste of food, even if it’s left in there for a few days.
  • When warming up your food, glass containers won’t release any chemicals at the hot temperature as plastic containers can.

If you do pick plastic containers, make sure they are BPA-free.

Instructions

Italian Lunch Box
  • Slice the tomatoes and mozzarella and place them in the lunch box container.
  • Add pesto on top and a handful of pine nuts. Finish with fresh basil leaves.

  • In a small separate container prepare the dressing: mix olive oil, vinegar, salt, and pepper. 

  • Toast a slice of bread and add to the container. Wash your grapes and add them too. And you are ready to go!

Vegan Lunch Box
  • Prep the salad: chop the cucumber, cut in half the cherry tomatoes, add the cooked brown rice, chickpeas, chopped fresh parsley, green and black olives, extra virgin olive oil, salt, and pepper, and mix.

  • Slice the avocado in half and remove the skin. Add the lemon wedge next to it.

  • Place the carrot and celery sticks in the container with a few tablespoons of hummus.
Energy Boost Lunch Box
  • This lunch box is super easy. You don’t actually have to cook anything. Just place the greek yogurt or coconut yogurt (for a vegan alternative) in the lunch box, add the maple syrup, and top with the mixed nuts.

  • Slice the apple and add the peanut or almond butter.
  • Add the mixed berries to the box and you are ready to go!

Protein Lunch Box
  • Roast the chicken breast: preheat the oven to 220°C/425F and line a baking tray with greaseproof paper. Season the chicken with olive oil, the juice of one lemon, salt, pepper, and oregano. Place on the baking tray and cook for 15-20 minutes.
  • Slice the chicken and add the cherry tomatoes, previously seasoned with olive oil, salt, and a bit of oregano.

  • Slice the boiled eggs.

  • Slice the apple and add the peanut or almond butter.
Greek Lunch Box
  • Prep the Greek salad: chop the cucumber, cut in half the cherry tomatoes, add the chickpeas, chopped fresh parsley, green and black olives, extra virgin olive oil, salt, and pepper, and mix.        

  • Add the cooked brown rice and lemon wedge in the lunch box.
  • Add the fresh grapes.

The Kid’s Healthy Eating Plate was created as a fun and easy guide to encourage children to eat well and keep moving. The plate’s guidelines emphasize variety and quality in food choices. The formula is simple: fill half your plate (or lunch box) with colorful fruits or vegetables (aim for two to three different types), one-quarter with whole grains, and the remaining quarter with healthy proteins. Healthy fats and a small amount of dairy (if desired) round out a tasty meal that will fuel an active, healthy lifestyle.

When packing your child’s lunches, let the Kid’s Healthy Eating Plate guide and inspire you:

Choices

  1. Choose any 1 fresh fruit. For example: grapes, apple slices or rings, any melon chunks (cantaloupe, honeydew, watermelon), any berries (strawberries, blueberries, raspberries), or banana slices.
  2. Choose any 2 vegetables. For example: carrot coins or sticks, cucumber, broccoli, bell pepper strips, asparagus spears, summer squash ribbons, or grape tomatoes.

    • Eat a Rainbow = red grape tomatoes, orange hummus, yellow cheese, green cucumbers and bell peppers, blueberries, purple grapes.
  • Shapes: Cut sandwiches into triangles or smaller squares, or use cookie cutters. Mini cookie cutters can transform apples, watermelon, or cantaloupe into juicy heart or star shapes. A vegetable peeler makes elegant ribbons of any firm long vegetable. Carefully use a knife to cut sticks of carrot or bell pepper.

Save Time with Meal Prep

Amidst hectic weekday schedules, meal prep is a great tool to help keep us on a healthy eating track. Although any type of meal prep requires planning, there is no one correct method. Below are just a few ideas relevant to kid’s lunches, but you can learn more about using this helpful strategy for other meals, too!

  • Choose a day that you are less busy to wash and chop fruits and vegetables, and prepare batches of healthy proteins like chicken, eggs, and beans. If you don’t have time for this, don’t feel guilty about purchasing pre-chopped and washed produce, pre-cooked chicken, or canned beans in the supermarket (but be on the lookout for added sodium in prepared foods, and rinse and drain canned beans).
  • Have kids participate in food prep! Younger children can help to wash fruits and vegetables. Older children can learn how to use a knife on softer foods.
  • Have children pack their lunch boxes the night before. Display choices of protein, vegetable, fruit, etc. and let them create their own meals based on the Kid’s Healthy Eating Plate.
  • For younger children, include finger foods that do not need utensils.
  • Search “kids lunch ideas” online for endless inspiration on how to fill your child’s lunch box with healthy food.

Super Snacks

Snacks are meant to fill the gap between meals, not become a whole meal in itself. Keep snacks small. An easy rule of thumb for a satisfying snack is to pair a protein-rich food with a carb-rich food. Including a healthy fat will quiet hunger pangs even more. Depending on the child’s age and activity level, they may need one or two snacks a day.

Examples:

  • ¼ cup nuts, 1 cup shredded mini whole wheat squares (with no added sugar)
  • Apple slices, ½ cup chickpeas roasted in olive oil and spices [get the recipe]
  • ¼ cup sunflower seeds or nuts, ¼ cup dried apricots, cherries, or raisins (with no added sugar)
  • String cheese, 1 cup of grapes
  • ½ cup blueberries or strawberries, 5 ounces of plain Greek yogurt
  • Peanut, almond, or sunflower seed butter spread on a small 100% whole-wheat pita
  • Carrot sticks or sliced veggies, hummus

Go for Water

Don’t forget to pack a water bottle for refilling throughout the school day. Water is not only the best choice, but a necessary one. It restores fluids lost through everyday tasks of breathing, sweating, and even digesting meals. It keeps the body’s temperature normal on hot days and carries nutrients and oxygen to all cells. It is also free of calories, sugar, and caffeine, and other additives found in sugary drinks. Beyond plain water, flavored and unsweetened seltzer or fruit-infused waters are also great healthy beverage choices.

Fluid needs vary based on a child’s age, size, gender, and activity level. The National Academy of Sciences recommends a range of seven to 14 cups of water per day, with the lower end for toddlers and the higher end for teenage boys. Part of this amount can come from water-rich foods like fruits and vegetables. Only when your child participates in vigorous sports lasting long periods of time (over one hour) should sports drinks be considered to supplement water. In this case you may consider making your own sports drink by mixing one quart (32 ounces) of water, 1/8-1/4 teaspoon of salt, and two ounces of 100% orange juice or plain coconut water.

Sugary drinks are a major contributor to the rise in obesity and type 2 diabetes in children. In 2016 the American Heart Association recommended that children and teens consume less than 25 grams, or six teaspoons of added sugar per day, and sugary drinks should be limited to no more than eight ounces per week.

Use an Insulated Lunch Bag to Keep Meals Safe

If lunch contains perishable food items, be sure to pack with at least two cold sources! Ice packs & frozen juice or water works great!

No matter your age, the end of summer is also a time of beginnings. This means a new school year, new episodes of your favorite TV show and the start of football season.

Students, sports fans and outdoor enthusiasts all have one thing in common: packed lunches. However, some people still pack perishable food in an old-fashioned brown paper bag instead of an insulated lunch box. According to the U.S. Department of Agriculture, food is unsafe to be eaten if it’s kept in an old-fashioned brown paper bag longer than 2 hours. Insulated lunch boxes help maintain food at a safe temperature until lunchtime.

Why keep food cold? Foodborne illness can multiply rapidly at temperatures between 40°F and 140°F. This means that if you are tailgating or leaving in the morning for school or work, you’ll need a plan to keep your food cold. You’ll want to use at least two cold sources in an insulated bag to keep perishable foods in your lunch safe; ice or gel packs in your insulated bag or box work best.

Perishable foods, such as cold cut sandwiches and yogurt, can be left out at room temperature for no more than 2 hours before they become unsafe to eat. With an insulated lunch box and a chilled freezer gel pack, perishable food can stay cold and safe to eat until lunch. You can find re-usable cold sources at the store (right next to the lunch boxes) or make your own by filling a water bottle or plastic container with water and freezing it. Depending on how much food you are packing you may need several cold sources. Above all, choose a lunch box or tote that is easy to clean.

Packing a hot lunch? Use an insulated container to keep your food hot until lunchtime. Before you warm up your food, fill the container with boiling water and let it stand while you heat your food. Heat your food to at least 165°F, then empty the water out of the insulated container, pack your food and seal it tight. Keep the container closed until lunchtime so the food stays hot. If you are heating a cold entrée in your office kitchen be sure to heat it until it is 165°F, or hot and steaming.

When packing your insulated lunch bag, remember to add some hand wipes, so you can clean your hands before eating if there are no facilities nearby. When you return home and empty your bag or box, wipe the insides with hot soapy water and let it air dry so that it is ready for your next adventure.
