This weeks pattern comes as a request from the CCP crafters group. It is a very small and dainty jacket/cardi for 16-18 weeks. I will have a hat and booties up to match it in the future. I know bubba’s of this size more often then not don’t wear clothing and instead use wraps/cocoons ect, but it is incredibly important that there IS clothing options available for those who do need them, and as it stands now, there is such a lack of items to fit the 16-20 week range. Hopefully I can bridge that gap some with a few items for people to make and donate.
Fingering / 4 ply (I used Moda Vera Gelato)
1: chain 31, hdc in the second chain from hook and each across (30)
2: ch3, turn, 2dc in the first stitch, dc in the next stitch, repeat across. (45)
3: ch3, turn, 2hdc in the first stitch, hdc in the next 2 stitches, repeat across (60)

A scattare l’istantanea di questa delizia tipicamente estiva è l’Osservatorio del Sigep di Rimini, il Salone Internazionale di Gelateria, Pasticceria, Panificazione Artigianali e Caffè di IEG – Italian Exhibition Group, in attesa della prossima edizione della manifestazione, prevista finalmente in presenza dal 22 al 26 gennaio 2022, presso i padiglioni della Fiera della cittadina romagnola.
Il gelato artigianale raccoglie le eccellenze di ingredienti, un marcato aspetto salutistico del prodotto e la socialità nei consumi, proponendosi come simbolo della voglia di rinascita dell’intero Paese. Come spiega Claudio Pica, segretario generale dell’Associazione Italiana Gelatieri e vicepresidente nazionale FIEPET Confesercenti, in base a una prima stima, i consumi nazionali segnano un +14% da inizio anno, con punte legate al meteo che, in Calabria e Roma, raggiungono rispettivamente un +20% e +22%.
Per quanto riguarda le tendenze, la fotografia scattata dall’Osservatorio restituisce un’immagine in cui il gelato assume il ruolo di una vera e propria SPA per il palato, momento di appagamento, beatitudine e autogratificazione. Come spesso accade nelle fasi post recessive, i consumatori tendono a razionalizzare e a scegliere in maniera oculata, ma senza rinunciare a togliersi qualche soddisfazione e senza sensi di colpa: c’è voglia di riscatto, di star bene, secondo il principio “qualcosa di bello e buono me lo merito”. E il gelato, per molti aspetti, è il premio ideale.
Parlando di gusti, le tendenze indicano che in questo momento le preferenze del pubblico non sono propense a inseguire nuovi sapori a tutti i costi: meglio seguire la tradizione e assecondare il ritmo della natura, con ingredienti di stagione anche se disponibili per un periodo di tempo limitato. Piacciono anche gli abbinamenti tra gusti semplici, ma capaci di sollevare curiosità, come quelli creati da Eugenio Morrone, campione del mondo di gelateria al Sigep del 2020, il quale propone ad esempio limone di Sorrento da assaporare con la cannella, oppure la salvia accostata alla mela Smith e all’ananas.
Spiega Giancarlo Timballo, Maestro friulano, presidente della Coppa del Mondo di Gelateria, che ormai si creano gusti e sapori in base ai frutti che il territorio offre anche per un periodo temporale circoscritto. Ad esempio, in Friuli l’inizio dell’estate è il periodo di tarassaco, sambuco, petali di rosa canina o di papavero, seguiti, dopo qualche settimana, da olivello spinoso e ginepro. Da qui nascono ad esempio i gelati al tarassaco variegato al papavero, ingredienti che richiedono pazienza e attenta lavorazione, per sapori deliziosi ed esclusivi.
Chilometro zero e massima praticità sono i must per il gelato consapevole. Su questa falsariga la Campionessa Mondiale di Pasticceria Sonia Balacchi ha messo a punto una collezione di monoporzioni gelato, ideale sia come “street food”, sia per la “home delivery”. Qualche esempio che fa venire l’acquolina in bocca: il Natura Sandwich Gold, con pane biscotto all’albicocca, arancio e zafferano ripieno di gelato Kefir mango, ananas, maca e zenzero candito; oppure il Natura Sandwich Green, senza lattosio e vegano, con pane biscotto al limone e banane, e con ripieno di sorbetto al kiwi, avocado, mela e moringa.
E per evitare assembramenti nello spazio della gelateria, alcuni punti vendita si attrezzano esponendo il libro degli ingredienti fuori dal negozio, in modo che, arrivando al banco il cliente abbia già le idee chiare.
Ma anche se questi abbinamenti stuzzicano la fantasia e la curiosità, alla fine sul cono continuano a vincere i sapori antichi, magari un po’ rivisitati. I classici caffè o zabaione restano nel cuore di chi divora coni e coppette, anche se quest’anno ci si aspetta l’exploit della mandorla grezza che insidierà il podio a pistacchio e cioccolato

E’ evidente che gli sforzi fatti nei primi due quarti con minutaggi importanti da parte di tutti siano stati puniti negli ultimi due quarti. Mancava anche un play come Simoncelli e questo ha evidenziato il gap fra noi e loro. Nella zona a nord del campo sportivo comunale presto crescerà un bosco. Quattro giovani infatti hanno preso in affitto un ettaro di terreno per avviare una startup il cui fondamento è la nascita di una piantagione di Paulownia, pianta tra quelle in grado di assorbire più anidride carbonica in assoluto.
Treebù e la soluzione per catturare l’anidride carbonica
Protagonisti sono quattro giovani che vivono tra Verona e Varese, con un mix di lauree: ingegneria, agricoltura sostenibile e mediazione linguistica e culturale. Ad accomunarli il desiderio di generare un impatto positivo duraturo attraverso i progetti di Treebù, questo il nome della loro impresa che gioca con le parole tree (albero) e tribù. Giacomo Alberini, amministratore della società e coordinatore del progetto, spiega: «L’anno scorso abbiamo scoperto questa pianta e le sue caratteristiche, abbiamo approfondito la conoscenza e sperimentato in un piccolo spazio, abbiamo visto che il lavoro era sostenibile, le prospettive accattivanti e quindi siamo partiti investendo cinquemila euro. Trovato un terreno in affitto e iniziati i lavori, abbiamo avvisato il sindaco della nostra presenza». E Antonello Panuccio è rimasto entusiasta, tanto che quando può promuove l’iniziativa.

«La nostra», riprende Alberini, «è una società benefit, forma giuridica d’impresa che consente a un’azienda di bilanciare un beneficio pubblico con gli utili degli azionisti. Quando le piante cresceranno, non solo contribuiranno al miglioramento della qualità dell’aria ma saremo in grado di emettere certificati di CO2 per quelle aziende che hanno l’obbligo di acquisire certificati verdi o il desiderio di ridurre il proprio impatto ambientale. Per ora proponiamo la vendita di piccoli pacchetti che consentono a chi investe di promuovere la propria immagine come fautori della sostenibilità e in prospettiva un ritorno economico». Non si tratta dunque di una semplice vendita di piante Paulownia ai contadini con la promessa di acquistarne poi la legna, pratica già diffusa in Italia e che in alcuni casi ha dato adito ad esperienze negative per la poca chiarezza dei progetti stessi, ma dell’avvio di una vera e propria filiera.
«Compriamo piantine da partner affidabili, in Italia», spiega Alberini, «ne piantiamo poche centinaia per ettaro, seguiamo il ciclo completo. Cerchiamo di inserire il prodotto nel mercato tradizionale del legname ma anche in alcuni progetti innovativi di produzione di packaging biodegradabile, produzione di moduli prefabbricati, di mobili in legno con giunture in plastica e altro ancora, compreso l’uso degli scarti e la realizzazione di nuovi tessuti ricchi di cellulosa».
Per ora è stata completata la prima piantumazione, un ettaro. «E adesso ci stiamo preparando a mettere a dimora altre piante a settembre, un migliaio su altri tre ettari», spiega l’agronomo Alessandro Ermanis. «Per noi sostenibilità è anche cercare di ottimizzare le risorse e puntare su energie alternative», aggiunge, «per questo motivo abbiamo scelto di irrigare i campi utilizzando sistemi a goccia, molto più efficienti, alimentati da una pompa ad energia solare che non inquina e consuma molto meno. Siamo solo all’inizio, ma stiamo già progettando di valorizzare al 100 per cento queste piante, cercando tutti i modi sostenibili di utilizzare il legno che produciamo». «Per quanto riguarda le spese», conclude Alberini, «finora ci siamo autofinanziati, crediamo fortemente in questo progetto. A breve partirà una campagna social con l’obiettivo di adottare le prossime piantumazioni di settembre, a cui potrà partecipare chiunque».

There are many types of black truffle, which one is considered the most exquisite?
The best black truffle is the one from France, from Perigord, where, by the way, I come from.Our season is in winter, that is, now they collect the last most delicious truffles there. You can search in summer, but winter is a million times tastier. For searching, as you probably know, they use dogs and pigs. The problem with pigs is that they always try to eat the truffle they find. Therefore, the best hunter is a dog. Ten years ago, I went for truffles with my friend, he had an old dog Vicki, we came to a place where many oak trees grew – after all, truffles mostly grow around them, – a friend gave a command to the dog, and in 10 minutes we had about 20 truffles! And my grandfather was looking for truffles on his own, without any help, – he sees that midges are circling over a hole in the ground, which means there is a truffle – he attracts them with his smell.In general, in Périgord everything is connected with truffles. Great chefs like Ducas, Bocuse and Robuchon use Perigord truffles. There is also a truffle market there, although now the sale is limited due to the fact that the number of mushrooms is decreasing. Independent consultants walk around the bazaar and evaluate truffles. Depending on the quality, a kilogram of black truffles can cost from u800 to u1200. A good ripe mushroom has a strong and pleasant smell. It looks very bumpy and black-blackish, and the flesh is dark gray or reddish-black with light veins.Black truffles from France are sold all over the world, so you don’t have to go to Périgord for it.
Since you are from Périgord, you probably have some family-run traditional truffle dish.
Of course my parents and I are making a truffle omelet. To do this, put the eggs, right in the shell, in a box along with the truffle, and then leave them in the refrigerator for two or three days. Truffle has such a strong aroma that the eggs have time to soak in it.Then we prepare an omelet from these eggs as usual, and only when it is almost completely ready, we take a pinch of that very grated mushroom and sprinkle it. Then we turn the omelet over, it comes to full readiness, and can be served, garnished with lettuce leaves. I personally recommend drinking red wine. Well, you can still have very good Burgundy white. In general, there is a tendency in European cuisine – I really like it – to combine simple products with very sophisticated ones. For example, I love to cook truffle potatoes.For the preparation of potatoes in my homeland, they do not use butter, but duck fat. While it’s roasting, I slowly add finely chopped parsley and garlic to the pan, and then, at the very end, sprinkle with fragrant grated truffle. It’s so delicious! This dish is called “Saladez potatoes”. In general, we, the French, call potatoes a truffle for the poor, so it turns out funny – the collision of two layers on one plate. I also cook with the so-called “old” vegetables, before they were used only for feed to pigs, and now – in haute cuisine: artichokes, turnips, Jerusalem artichoke.But with vegetables like eggplant and paprika, I wouldn’t cook.
What else should you not combine this mushroom with?
In no case should you combine truffles with products that are equally strong in taste and smell. I think if you try a dish with black caviar, for example, and with truffles, you will not remember what you ate at all – all the tastes will smear, mix, and the specificity will be lost. I would not cook together truffles and strong-smelling mushrooms, such as shiitake, morels, porcini – they all have their own special, independent taste that will prevent you from enjoying the truffle.For the same reason, you shouldn’t cook spiced truffles – their tastes will compete, which is bad. Salt and pepper can of course be used.
Would a truffle go with meat?
I love how the truffle goes well with the meat. For example, the classic “Rossini’s Tornado”: we take a juicy piece of beef, already well fried, on top we have foie gras, finish with a Perigord sauce made from port wine and truffles. Another recipe: make small cuts in a fresh piece of meat and stuff it with truffle, and then fry it.Chicken can also be made with truffle. I choose the fattest bird so that there is a lot of juice. I stuff it under the skin with truffles, add salt and pepper. You can cook either on the grill or in a pan. The chicken will give an incredibly flavorful juice that will saturate the side dish – homemade fried potatoes or mashed potatoes. With the addition of truffles, sauces for salads are also made: they take balsamic vinegar for the color of beetroot, add olive oil infused with truffles – the sauce is ready.
Experiments are in vogue now, so they probably make desserts from black truffles?
I’ll make a reservation right away: I’m not an expert in this.A pastry chef is a completely different profession, they have different rules and laws than ours. Even all famous chefs like Paul Bocuse have their own pastry chefs. However, I would still venture to note that for me a dessert made of black truffles is a bad idea. I tried truffle, parmesan and foie gras ice cream with a chef in Paris. In my opinion, this is already a perversion. I try to adhere to these principles in the kitchen: respect the product, guests and be honest. Therefore, I would never make ice cream from truffles or, there, from black caviar.

Sorbet made from strawberry and lemon amalfi
Of course, you can stay with a simple three-ingredient strawberry ice cream recipe and live in peace, but when it comes to the holiday, you can take the risk and cook something more.La Grotta Ices in South London is known for strange and impressive flavors: tomato with peach, prunes with Earl Gray tea, chocolate with green tangerine – these are just some of the combinations that Kitty Travers is experimenting with. 350 g strawberries;
Juice of one lemon;
125 g of unrefined granulated sugar;
125 g cold water.
- Gently rinse the strawberries with cold water in a large bowl or sink. Then, place the clean berries on a kitchen towel or paper towel. Let them dry.
- Peel the green leaves from the strawberries and cut the berries in half. Leave in a large bowl.
- Cut half the lemon into small pieces. Add chopped lemon, sugar and lemon juice to the strawberries. Stir the ingredients lightly, then cover the bowl and refrigerate for 1 hour (can also be left overnight).
- Remove the fruit bowl from the refrigerator, add water and blend everything with a blender to a smoothie-like consistency. Use the back of a tablespoon or a spatula to strain the puree through a sieve into a clean container. Strain the mixture until only bones remain in the sieve that can be composted.
- Pour the future sorbet into an ice cream maker and beat according to your machine’s instructions (about 20-25 minutes) until the mixture thickens and hardens.
- If you do not have an ice cream maker, freeze the sorbet in a shallow container and stir vigorously every 45 minutes until it hardens.
- Transfer the finished sorbet to a convenient container with a lid. Place wax paper on top to restrict airflow. Cover and freeze at least 3 hours before serving.
Olive Oil & Coffee Ice Cream

Important note! Once placed in the freezer, the sorbet can be eaten right there for several hours before it becomes too hard to scoop easily and enjoy its silky texture.Ice cream that is too hard (and, accordingly, too cold) should be slightly softened by placing the ice cream container in the refrigerator for about 30 minutes, so that it can be conveniently served later.

So, you will need:
750 ml whole milk
150 ml fresh cream (not whipped)
180 g cane sugar
5 g carob flour
(you can use any other thickener, for example corn starch )
5 cm fresh ginger root
30 g grated lime zest
240 ml lime juice
150 g granulated sugar
1.In a saucepan, stir together the milk, sugar, 2/3 of the grated lime zest and the pieces of chopped ginger root. Bring to a boil and simmer, stirring constantly, until the sugar is completely dissolved.
2. Remove from heat, transfer mixture to a bowl and continue to mix vigorously in a “cold” water bath (that is, the bowl is in a container filled with ice and cold water).
3. Add thickener and fresh (not whipped) cream to thicken the mixture. Stir. Leave in the refrigerator for at least 3 hours.
4. Strain through a strainer and remove the ginger pieces aside, chop the rest with a blender. Add lime juice.
5. Transfer the mixture to an ice cream maker and start the timer for 40 minutes. Or place it in the freezer for a couple of hours.
6. Serve, garnish with the remaining lime zest and fresh green mint leaves.
