Ultimate Vegan Christmas Roast Wellington
This is the most epic ultimate vegan Christmas roast wellington. Gone are the boring nut roasts, this recipe is game changing!! The flavours are incredible & it has a really meaty texture whilst being packed with Christmassy flavours. I hope you all try it because its literally FIRE!!
2 tbs Vegetable Oil
1 Onion, chopped fine
1 Leeks, chopped fine
2 cloves Garlic, minced
1 tsp Sea Salt
1 tsp Cracked Black Pepper
Pinch All Spice
Pinch Ground Nutmeg
1 tbs Dried Sage
2 tsp Dried Rosemary
1/4 cups Dried Cranberries, chopped extra small
1/2 cups Dried Apricots, chopped small
1 cup Chestnuts, chopped small
1 cup Cider
1 cup Vegetable Stock
1 tbs Miso Paste
2 & 1/4 cups Vital Wheat Gluten
3 tbs Chickpea Flour
Spice mix rub
Rest of the Cider
2 Cups Veg
2 cloves Garlic
1 Bay Leaf
Handful Thyme & Rosemary
1 tbs Miso
2 tbs Balsamic
4 tbs Cranberry & Orange Sauce
1 block Shop bought Vegan Puff Pastry
3 tbs Maple
3 tbs Milk
4 tbs Vegetable Oil
- Sweat the onion, leeks, garlic, herbs with the seasoning & spices.
- Once soft add the dried fruit & chestnuts. Sauté for 3 minutes.
- Deglaze the pan with the cider, then add the stock & miso paste. Allow the mix to simmer for 2 minutes before turning the heat off.
- Mix together the dry ingredients in a large mixing bowl.
- Once the wet mix has slightly cooled add it to the dry ingredient bowl & mix well.
- Knead the mixture for at least 10 minutes. The pre heat your oven to 180 degrees C.
- Allow the dough to rest for 10 minutes whilst you clean up.
- Roll the dough into a sausage shape around 4’’ in diameter.
- Sprinkle the spice mix on your board & roll the dough into it until well covered.
- Wrap the dough in cheese cloth & tie each end.
- Place the wrapped dough into a deep baking tray with the rest of the roasting ingredients.
- Bake for 2 hours at 180 degrees C, on the bottom shelf – turning half way through cooking.
- Once baked, remove from the tray & allow to cool slightly before removing the cheese cloth.
- Roll out your puff pastry into a tea towel sized rectangle around 3mm thick. Score strips a 3rd of the way in the pastry on each side so you can make a lattice (optional – see video for tips).
- Brush the roast with cranberry sauce. Then place into the centre of the pastry & wrap. Brushing the glaze on when needed.
- Bake for 15-20 minutes or until golden.
- Whilst the roast in cooking, strain the roasting mix through a sieve into a saucepan pressing through the lovely juices. Place the saucepan over a low heat & allow the gravy to simmer for 10 minutes until thick, you can add a touch of flour if it’s too thin.
- Once the Roast is golden, carve & serve with the gravy.

Langford Lakes Christmas Tree Farm at Langford Budville has chosen seven-year-old Tayen Gilbert from Bridgwater to cut the ribbon and launch the farm’s Christmas Shop on 17 November.
Tayan who suffers from the genetic condition, neurofibromatosis, will declare the shop open at 10am.
Kali Gilbert, Tayen’s mum, said: “We’re thrilled that Tayen has been selected to officially open Langford Lakes Christmas shop and Christmas Tree Farm. She’s very excited. As a family we love Christmas and this will be a treat for all of us.
“I decided to nominate Tayen as she’s a little star. She has a complex medical history and neurofibromatosis causes tumours to grow along nerves anywhere in the body. She was diagnosed at 22-months-old with bilateral optic pathway gliomas (tumours) that have spread through her brain to the back. She started chemotherapy straight away but unfortunately lost all vision just six weeks into treatment.
“Following this she needed bilateral shunts to drain fluid on her brain. She also has complex epilepsy and is currently now on her third round of chemotherapy treatment. None of this stops her though. Tayen is a powerhouse of fun and energy and captures the hearts of everyone she meets.”
The Gilbert family has fundraised for various charities over the years. They also visit Children’s Hospice South West (CHSW) at Charlton Farm, which is Langford Lakes’ Charity of the Year.
Langford Lakes Christmas Tree Farm is hoping to collect as much money as possible for CHSW from the sale of mince pies and teas and coffees, aided by volunteers for the charity. The refreshments will be on offer from its launch event through to its last day of trading before Christmas on December 23. Last year the farm raised £2,955 for the organisation.
Kali added: “CHSW has been a great lifeline of support and respite for my whole family. It is a fantastic charity and we’re delighted to hear that Langford Lakes will be fundraising for it again this year.”
CHSW is currently the only provider of specialist hospice care for children in the region. It offers much-needed support for youngsters with life-limiting or life-threatening conditions and their families at its three hospices: Charlton Farm in North Somerset, Little Bridge House in North Devon and Little Harbour in Cornwall.
Reg Hendy from Langford Lakes Christmas Tree Farm, said: “We’re so pleased that Tayen will be helping us open our Christmas Tree Farm and shop for the festive season.
“She will be our VIP for the day and will also receive one of our British grown Christmas trees. We hope Tayen and her family have a fantastic morning with us kicking off the countdown to Christmas.
“We would also like to invite everyone to this special festive season launch event on Saturday, November 17. The fun starts at 10am with an official ribbon-cutting. Bring the family and enjoy the refreshments, helping us raise invaluable funds for CHSW.”

Butternut Squash Wellington

Serves: 6 people
20 grams fat
- 1 large butternut squash
- salt & pepper
- olive oil
- 60g / 2.1oz walnuts
- 3 shallots
- 400g / 14oz chestnut mushrooms
- 4 garlic cloves
- 8 sprigs fresh thyme
- 1 tbsp soy sauce, or tamari for gluten-free
- 1 tbsp dijon mustard
- 2 large handfuls of spinach
- plant-based milk for glazing
- 2 x 320g / 11.3oz pre-rolled vegan puff pastry, use gluten free for gf option
- Preheat the oven to 200°C / 390°F fan-assisted.
- Trim the top off the butternut squash, carefully slice it in half lengthways, then peel and remove the seeds.
- Cut off the bulbous part from each half of the butternut squash (where the seeds were) leaving you with two long pieces and 2 bulbous pieces. Roughly chop the bulbous parts and transfer all the butternut squash to a baking tray. Drizzle with olive oil, season with salt and pepper, and roast for 30 minutes.
- Remove the tray from the oven, add the walnuts and roast for another 5 minutes.
- Add a drizzle of olive oil to a frying pan on a medium heat. Peel and dice the shallots, then add to the pan and fry for 8 minutes.
- Slice the mushrooms, and peel and dice the garlic. Add both to the frying pan and fry for 10 mins.
- Pick the leaves off the thyme and add to the frying pan, along with the soy sauce. Fry for 5 mins.
- Transfer the mushroom mixture to a food processor along with the dijon mustard, generous pinches of salt and pepper, as well as the walnuts and roughly chopped pieces of squash from the oven (leave the long pieces of squash to one side for later). Process until mostly broken down.
- Add the spinach along with a tbsp of water to a pan on a medium heat. Cook for a few minutes until wilted, then drain any excess water from the spinach.
- Before assembling the wellington make sure the mushroom mixture has mostly cooled.
- To assemble the wellington, roll out the first roll of pastry onto a large baking tray. Spoon 2/3rds of the mushroom mixture down the middle of the pastry, around 3 inches wide, leaving a couple of inches clear at the top and bottom.
- Pop the wilted spinach over the mushroom mixture and place the long roasted pieces of butternut squash on top. Spread the remaining mushroom mixture over and around the butternut squash, filling in any gaps.
- Roll out the second sheet of pastry and place it over the wellington.
- Press down with your fingers to seal the two sheets of pastry together. Trim the excess pastry with a knife and use a fork to crimp the edges (you can use the excess pastry to decorate the wellington and store the excess for a couple of days in an air-tight container to use in another recipe). Then make three cuts to the top of the wellington to allow the moisture to escape.
- Brush the wellington with plant-based milk and bake for 35-45 minutes at the same temperate (200°C / 390°F) or until the pastry is golden brown.
- Serve with your favourite sides and a good helping of gravy! Happy Crimbo!

STEP-BY-STEP COOKING RECIPE
Soak dry mushrooms in advance for the sauce.Blot fresh mushrooms with damp paper towels and cut off the stems. Chop the mushrooms. Melt the butter in a large skillet. Add shallots and onions and cook, covered, on low heat, until lightly browned (about 25 minutes). Put chopped fresh mushrooms, soaked dry mushrooms in a pan, cook over high heat for about 5-7 minutes, until they let the juice flow.
Next add thyme, salt, and black pepper. Reduce heat and cook, stirring occasionally, until mixture thickens (about 30 minutes).
Remove the films from the beef tenderloin. Cut off the sharp ends of the tenderloin and season with salt and pepper the rest of the meat.
Fry the tenderloin until brown in a skillet with olive oil.Allow a piece of meat fried, but raw inside, to cool, brush with mustard with a wide brush and set aside.
Cut the onion into small cubes and simmer in olive oil. Add the mushrooms, also finely chopped, with a sprig of thyme, and simmer.Pour in the cream and let the whole mixture boil.
Roll out a sheet of dough on a floured surface and cut it into 8 servings (2 per person) using a 6 cm round dough pan. Use a fork to pierce the dough in several places and brush the dough with a beaten egg.
Cut duck liver strips into 90 g each.
Preheat oven to 200 ºC and place all 8 pieces of dough in it for 20 minutes.Also put the meat in the oven 16 minutes for medium roasting or 20 minutes for well dan.
While the meat is cooking in the oven, grill the liver slices for 2 minutes on each side in a hot dry skillet and set aside on paper towels to absorb excess fat.
Cut the tenderloin into 8 equal pieces, 2 per serving. Place a piece of dough on a plate, on which sprinkle a little duxelle sauce with two spoons. Place the beef, duck liver on top, and top with a second piece of dough.
