Over the last year or two, I tried to cover some of the highly-rated and Michelin-starred Omakase restaurants in Singapore. Not the easiest guide to compile due to the cost involved, difficulty in booking (long wait-list for some), and there is that much sushi that I can have in a short span of time before fatigue sets in.

Other than freshness and quality of ingredients and value-for-the-money; the environment, pacing and variety of the courses, along with personality of the chef all play a part for the dining experience.

Sushi Kimura 鮨来村 is a one Michelin starred fine dining sushi-ya located at Palais Renaissance, an exclusive shopping destination at Orchard Road.

Known for its seasonally curated Edomae-style delicacies, it sources 100% of its ingredients from Japan (including personally sourced organic staples) and offers a meticulously paired sake and wine list.

Owned by Master Chef Tomoo Kimura, a graduate of Hattri Nutrition College in 1997, Sushi Kimura aims to provide its guests the true taste of nature using unadulterated ingredients and time-honoured traditions.

Named after Kou 煌, the founder’s son, Sushi Kou is helmed by Chef Yoshio Sakuta with 20+ years of experience. This Hokkaido-born chef worked in several renowned sushi restaurants in Sapporo (such as 2-Michelin-starred Sushizen) before venturing to Singapore.

To ensure diners receive full attention and quality-prepared dishes, there is only one seating per session for lunch and dinner.

Choose either the Aya Menu ($380++) which gives you 10 pieces of sushi and three dishes, or the Kou Menu ($450++) for 10 pieces of sushi and five dishes.

The highlight would be the Steamed Abalone with Abalone Liver Sauce. This dish prepared by steaming the abalone, cooking it simply with sake, water and kelp. The secret lies in how long it’s cooked for maximum flavours.

For 5 to 6 hours, the abalone is cooked in a traditional Japanese stone pot to maintain the right heat.

Chef Koichiro Oshino has come a long way, and finally opened his own – at the ground floor of Raffles Hotel which marked a full circle for him.

He was instrumental to the renowned Shinji by Kanesaka in Singapore – both the Raffles Hotel and Carlton Hotel restaurants received Michelin stars for consecutive years.

Diners can expect an intimate sushi experience at Oshino. For dinner, you can choose between courses of Sushi Edomae ($350) with 20 pieces of Nigiri Sushi, Maki, Soup, Dessert and Matcha; or the Chef Omakase (from $500) with Appetiser, Sashimi, Cooked dishes, Nigiri Sushi, Soup & Dessert.

Lunch would be more ‘affordable’, with the Sushi Edomae course of 15 pieces of sushi at $180, and Chef Omakase from $300.

I found the sushi pieces particularly flavourful with a delicate punch. Chef has created his own blend of Japanese red sushi vinegar for the shari (the sushi rice) – which is sourced from this hometown of Yamagata.

The omakase course was also interpreted with various cooked dishes prepared with seasonal ingredients, and I found myself looking forward to the next dish and the next. Truly an experience that was top-notch and in harmony.

Ki-sho is helmed by an affable Chef Kazuhiro Hamamoto, bringing with him a wealth of experience and creativity amassed from his apprenticeship days in Kyoto’s top culinary restaurants and one of Singapore’s top restaurants Waku Ghin.

The beautiful Ki-sho is housed in a grand colonial bungalow along Scotts Road, containing a main dining room of an intimate 10-seater sushi bar, and several other VIP rooms all furnished with distinctly artistic Japanese elements such as hand-laid flooring and gold leaf wallpaper.

The outstanding Japanese restaurant offers a selection of two different Omakase set menus priced at $300++ and $450++ per person.

This may not be the most affordable pricing around. But in comparison with the other top-tier Japanese restaurants available locally, we can see why it stands out.

The most aesthetically pleasing and perhaps indulgent dish was the Uni and Cavier – a beautiful ensemble of creamy Hokkaido sea urchin, luxurious Italian caviar, shiso flower and corn on a wasabi leaf, resembling the jubilant blossoming of flowers in Japan during spring time.

A Mio Lunch Menu ($180++ per person) of 16 courses includes appetiser, nigiri sushi, miso soup, Japanese Omelette and dessert. Also available is the Miyabi ($320++) of 20 courses and Hana ($480++) of 25 courses.

The Omakase of Miyabi ($320++) and Hana ($480++) are also available during dinner, from Tuesday to Sunday, 6pm to 11pm (last seating 8.30pm)

For the most expensive set, what you get is a number of appetisers, four cooked dishes, sashimi, 13 pieces of sushi, miso soup, Japanese omelette, and dessert.

Do not be surprised at the space. It is an 8-seater sushi restaurant. Three chefs helm the restaurant. Much attention is paid on execution and details.

This is a “kappo-style” restaurant, similar to a Keiseki meal where elaborately prepared dishes which look like pieces of art, are served.

Chef Takayama is formerly chef de cuisine at Mandarin Orchard Singapore, and began his career at three-Michelin-starred restaurants Kashiwaya and Koryu in Osaka.

Takayama’s signature dish is the Abalone + Uni which can be found in the dinner omakase menu.

The other dish to look forward to is the “Otsukuri”. While it essentially means sashimi, I got a combination of Hokkaido uni, Toyama baby squid, Nagasaki Otoro and Chutoro and a couple of surprises – each item there elaborately presented and even paired with different soy sauces to bring out the best of the flavours. Ayumu あゆむ means “walking towards a new beginning and a new vision”. The restaurant specialised in Tokyo Edo style sushi which focuses on the freshness and flavours of the ingredients.

The produce is sourced daily from Japanese fishermen and suppliers, then masterfully treated with traditional techniques to accentuate its natural flavours.

One of the defining elements of their sushi, is they use a special blend of different types of red vinegar for their sushi rice (shari).

I had the Hazuki 葉月 Omakase ($320) which included seasonal appetiser, sashimi, cooked dishes, nigiri (6 pieces), signature roll, soup and dessert.

The higher-priced Omakase Minazuki (from $420) includes more premium and seasonal items.

I was served by Chef Nakajima Shintaro, which had his own quiet charm, and overall the vibes were refined and intimate.

My favourite piece was the grilled Sea Perch, prized for its fatty and delicate meat, amazing pairing with the rice and crispy seaweed.

The luxurious Japanese restaurant is best known to serve the finest Wagyu from reputable farms across the globe.

Its name will probably catch your end, in which “Fat” represents luxury and indulgence, and a play on the word “Fatt” which means “prosperity” in Cantonese.

The kitchen is helmed by Chef Shigeru Kasajima, who draws from his background in French cuisine, employing French influences in Japanese cuisine to create unexpected dishes.

You can often see him at the intimate omakase dining room, in which you can watch his skilful preparation and make interactions and conversations with regards to the food prepared.

In terms of food, diners can enjoy their choice of beef prepared in different Japanese methods, from Shabu-Shabu, Sukiyaki, Hobayaki or the ever-popular Sumibiyaki (Charcoal-grill).

Teppei Japanese Restaurant is well-known for its affordable Omakase, priced at $100++ for a 17-course Omakase (it used to be $80++).

It is recommended to book a month in advance (you can do so online), as the space is small and can accommodate only 22 diners.

If you are thinking quality is compromised because of its price, no. Some of the dishes beats those served in more respectable restaurants, especially the crisp deep-fried king prawn which makes all other tempura ebi look insignificant.

Chef Yamashita Teppei always comes with something different, according to the season and his mood. That makes every visit to Teppei worthwhile and memorable.

Ginza Sushi Ichi propelled further into the limelight after it won a Michelin star in Singapore.

The intimate 23-seater restaurant is a branch of the award-winning Tokyo based Ginza Sushi Ichi, helmed by 34-year-old executive Head Chef Masakazu Ishibashi, more affectionately known as Masa.

He comes from a line of sushi restaurant owners, and takes great pride in preparing sushi with an artful flair for his guests.

The interior is like a typical high-end sushi restaurant, with the sushi masters preparing food in full view of the patrons, with a counter made from a 200 year-old cypress trees.

Tuna and sea-urchin are the restaurant’s specialty. Ingredients are purchased directly from Japan and flown in 4 to 5 times a week so only the freshest picks of the season are served to the guests.

Lunch would generally be the cheaper option, which includes Tubaki at $100++ (appetizer, 10 pc nigiri sushi, roll sushi, miso soup, and desert), Botan at $150++ (similar to tubaki except 1 extra side, assorted sashimi and nigiri sushi is 8 pc), and lunch omakase at $240++ (appetizer, 2 assorted sashimi, 2 dishes, 8 pc nigiri sushi, roll sushi, miso soup and desert). Dinner options can also be selected for lunch.

Syun helmed by Japanese Chef Hal Yamashita located at the Resorts World Sentosa RWS at Festive Walk, is part of their line-up of celebrity chef restaurants.

This is one of those restaurants that I liked immediately upon stepping in, warm and professional Japanese service, Japanese Wabi-sabi concept for its décor, and natural wood used for its furniture, beaming with rustic elegance.

Sushi describes some popular form of cuisine which many from diverse cultures enjoy.

Essentially chunks of fish covered by rice with seaweed, sushi is a fast food, quick snack and food form which many universally enjoy.

Sushi has a rich history, on the market there are many distinct versions of sushi or crafting styles.

Origins, history of Sushi

Sushi originated from Southeast Asia from efforts to preserve the shelf life of fish through wrapping fish within fermented rice.

Some 4th-century Chinese dictionaries contain a character which means pickled fish kept in rice with salting.

Many found out that upon dipping salted fish inside fermented rice, such fish was preserved through using pickling processes.

These are the oldest form of sushi. Once cooked rice is put in to begin the fermentation procedure, lactic acid bacilli is aired out. Such bacilli blend in with salt to pickle up fresh fish.

Sushi: Mode of preparation

Sushi gets crafted from slender slices of raw fish which get covered with rice with seaweed.

The seaweed, named nori, gets combined along dipped bamboo nets.

Though certain sushi gets manufactured by automation, top grade sushi is hand-made, crafted carefully.

Many sushi rolls get made through choosing different species of fish which meet very high standards in terms of fat levels, colors, or flavors.

The sushi chef slices out tiny sections of raw fish, then seasons these along spices, like some ginger roots.

Wasabi or soy sauce get often used to season sushi rolls.

The chefs add in some form of vinegar which gets boiled from fermented rice to season white rice which gets used to wrap up fresh fish with spices.

Then, the roll gets wrapped up using portions of nori leaves.

Visited 3 times already recently, but the first time was even better in terms of freshness and quality. Maybe because they are running the promotion for so long, and they are bringing down the quality of the fish? The Japanese chef at the Omakase counter area looked very tired and he had no smile on his face… I understand that he is busy though.

I recommend that he stops doing the promotion and maintain the quality and energy!! Will come back again for sure.

Review 3 The nigiri was amazing – fresh and melt in your mouth! Fish were sliced perfectly and the rice was compact yet you could taste every grain. Perfect mouthfeel! Review 1 Superb value for money sushi train restaurant direct from Japan. Be prepared to join the Q if you have not made a reservation. Waiting times easily in excess of 1h for walk-ins. But the wait is worth it for the range and quality of sushi on offer. For the prices, it is really excellent. In addition to sushi, there are also side dishes and rice/noodles on offer. Located inside Isetan.
Review 2 Highly recommend! First experience at Sushiro after recommendation from my Japanese colleague. Was not disappointed! Standards were as good as the rotating belt Sushi chains I’ve tasted in Tokyo, if not better. The pricing is pricier than tokyo but matches to Singapore’s sushi pricing relative to the likes of chains like sushi tei, ichiban, and sakae, but quality is so much better to local competition. I specifically liked the monkfish liver sushi, sardine sushi, dry uni ramen, tamago sushi. Queue was quick, was estimated a 45 min wait but ended up getting seats in 15 mins. Ordering system was straightforward and automated food service was efficient.

Review 1 This meal was at lunch time. I definitely enjoyed the food here 😛 i might have to break it down here. Start with the side dishes. Wagyu was done right at medium rare, tender full of flavor & juicy thanks to the very nice marbling on it. Grilled pork belly is very well seasoned, the light char flavor definitely a good lift to the flavor. Ox tongue with lemon on the side is so tender, lemon complements the taste and covered the mild gamey taste. I never knew Cod fish goes so well with the smell and citrus flavor of the lime, the lime literally doesn’t make the fish texture as oily as it looks and gives it a refreshing touch. The salmon belly by itself is so welldone, crispy skin juicy meat. The wagyu donburi served with ikura and foie gras, in 1 spoonful with the components including the onsen egg, taste so creamy, juicy, sweet and savory. The foie gras has a crispy outer layer that they torched nicely, crunch from it and smoky flavors really elevated the experience of the taste. I never knew foie gras can be so enjoyable. Overall it was a very satisfying meal for me with a very good service team that they have. The price is on the high side. Would come bak again for special occasion 🙂

Review 1 Had the Miraku Sushi course, and it was a fantastic experience.

About 16 courses in total, with dishes complementing the previous. At first I was a little underwhelmed by the gentle and neutral taste from the first three dishes, but later understood it was designed not to conflict the more flavourful dishes later on.

I appreciated that the sushi were bite sized and well tempered so the temperature difference from the ingredients complemented each other.

Service was wonderful – Chefs were very approachable and prepared our sushi following our eating speed. Staff were attentive as well.

Review 2 Overall was a fantastic dinner experience. Sushi and sashimi were fresh. The fish was of high quality with nice texture and taste. The wasabi from the 2nd course was absolutely delicious. It has a rougher texture and stronger wasabi kick which I rarely find in most japanese restaurants.

We had the tempura, miso soup and chawanmushi which were flavourful yet well balanced.

Finally, we had the dessert which were ice cream with 4 flavors (matcha, strawberry, vanilla and black sesame. Ice cream had a nice silky smooth texture. Black sesame was definitely my favourite. Matcha had that smoky flavor which balanced out the sweetness from the strawberry and vanilla ice cream.

Service was excellent. The waitresses were friendly, warm and attentive. We felt that we were being taken care of.

5/5 must visit. Will definitely come again to try out the other dishes.

I should say they have a greet team work in keeping customer happy to eat there every time.

Review 1 Made a dinner reservation for last Saturday. We didn’t regret it at all. All the fish were imported from japan and the chef took us on a culinary tour of Japan with this omakase meal. We thoroughly enjoyed the banter and talk we had with the chef at the sushi bar and were amongst the last to leave the restaurant. The ambience was nice, the decor was minimalist japanese, each dish was skillfully prepared, presented and the taste was out of this world. It made us miss Japan! The chef is really knowledgeable and passionate about his work. Though pricey, the quality is really top notch. We had no qualms about visiting the place again in near future. Review 1 Lots of variety. Branded products from Japan. Lots of people shopping but most didn’t buy a lot as prices are on the high side. A watermelon can easily cost you S$39/- and up. But if you are looking at good quality beef, snow Crab and things you hardly can get from else where except Japan, you may be able to find some of them here.

Review 1 Small restaurant and they will want to turn the tables once you’re done with your meal. Staff is friendly and attentive and will stay out of your way when you’re enjoying your meal. But once you’re done they will check if you need anything else cos there’s usually a queue outside the small restaurant.

Food is pretty good. The Chirashi’s rice is very flavorful and helps make it more enjoyable than if they just use normal white Japanese rice. Would definitely go back again.

Review 2 The chirashi don is fresh and generous portions of tobikko and comes with a small. O of miso soup. Ramen spiciness is just nice!
Review 3 Good value for some of the dons like the chirashi but not the salmon ikura Don. The place is very small and turnover is high. So expect to eat quickly and leave because the waitress will clear your plate as soon as you’re done.

Review 1 Need you want hotpot but the wait in haidilao next door is more than an hours wait, try the sukiyaki hotpot in Makino. Good beef cuts and attentive service.
Review 2 I went to work nearby last Sat, buy lunch at Makino, and order the food I want to take out. Although the price is a bit high, the unagi rice and egg really surprise me!! The half-boiled egg is just right and taste smooth, and there are a lot of thick slices of unagi. I can only say that it is so delicious, and I am touched to be nourished 💗 I may invite friends to enjoy the meal at Makino next time!

Review 1 This restaurant is located within the Amoy Hotel. We had dinner here on a Sunday evening and the restaurant was pretty full. As we had made a reservation before hand, we were quickly shown to our table.

Most of the items on the menu looked delicious and the prices for some items are on the higher side. The service crew were polite and highly efficient in taking our orders, serving our food and refilling our drinks.

We ordered the premium Chirashi, Jin Chirashi, Aburi Chirashi, Cod Fish in clear soup Nabemono, soft shell crab tempura and the grilled squid. All dishes tasted great and fresh with the exception of thecod fish Nabemono – the flavor of the soup can be improved as it was pretty tasteless.

Review 2 The sashimi is very fresh. We also love the aburi salmon salad, the chirashi bowls (the sushi rice is super yummy), the garlic fried rice and all the tofu dishes!!

The ala carte cooked dishes are average so we tend to avoid ordering those.

We stick to the above and are always very satisfied when we eat here. Very good with Eatigo discount.

Review 3 This place is hard to find but the interior looks nice ! The soft shell crab and chirashi don are really nice and fresh. Ordered the aburi version as I rarely come across this style of chirashi. It comes with unagi and the portion is huge! So full and even though I love their rice (seems like they mixed some grains or used different type of rice) I couldn’t finish.

Review 2 For a place that specialises in wagyu beef, their lower priced dishes like sushi and various side dishes are actually very good too. Very fresh sushi and highly recommend the wagyu curry rice. Usually not packed during peak hour on weekends if you are reasonably early, say 6pm.
Review 3 Fantastic quality ingredients. Very limited choice of beer (one, I think). Scallop caapacio is particularly good.

Ngiri – Some slices of fish served up over the sushi rice.

Maki – Fish wrapped with rice or wrapped with seaweed.

Uramaki – Fish which gets covered with seaweed using rice over to cover.

Temaki – Hand-rolled sushi using cone form.

Sashimi – Fish that gets served out with no rice or seaweed.


Can Sushi be served in cooked form?

If you are just starting with sushi, you could start out just by tasting the cooked versions.

Certain variations, forms of sushi come in cooked form.

For example, the California roll has imitation crab which gets seasoned over with avocado or cucumber.

When you get sushi which is topped up with eel, this is usually cooked.


Could Sushi transmit viruses, bacteria?

You could fall sick, get ill from eating sushi when you take in bacteria or viruses embedded in raw fish.

Over in USA, it remains less likely that one gets ill from taking in bacteria contamination from freshwater fish.

Overall flavors of raw/cooked fish are very distinct. Certain sushi gets frozen to below 40 degrees, purging all parasites. When it gets cooked well, it remains just as edible as cooked sushi.

When a chef says that he makes the kind of sushi he wants to eat, this is a chef to trust with your meal. Indeed, Chef Shinji Kanesaka offers the option of ‘omakase’, which is short for ‘omakase shimashita’ or ‘I trust you [in this context, with my meal]’. That means you set a price for the meal and the chef, based on his expertise with seasonal ingredients and food preparation, decides the food you would taste. We recommend choosing ‘Chef’s Omakase Special’ for lunch or dinner and taking a seat at the hinoki cypress counter. If his desire to make sushi he wants to eat is not enough to convince you to go ‘omakase’, it might be helpful to mention that Chef Kanesaka has one trusty Michelin star under his belt.

From Shinji by Kanesaka, we learnt a variant of the three-second rule, where sushi is meant to be consumed within three seconds of preparation. That is definitely the recommended time at Shinji by Kanesaka to ensure you taste exactly what the chef has prepared for your enjoyment. There are only 22 seats at the restaurant, so if you are someone who looks for the fine details, book in advance to taste their sushi with grated fresh wasabi — no tube or powdered form for this place.

This is one serious ‘kaiseki’ restaurant with a 16-seat counter and a private room. By serious, we mean their dedication to ‘kaiseki’, the setting of the restaurant is casual. Each course is intricately prepared and served in an order to make the entire meal seem like a musical piece. Imagine Japanese tea masters sipping the characteristic drink of Japan while tasting the multi-course ‘kaiseki’ made from seasonal ingredients and plated to reflect a particular theme. Trust the chef with ‘Omakase’ Lunch or Dinner, or taste the ‘Tsuki’ dinner menu, which covers every craving from clear soup (‘suimono’), sashimi, shokuji (‘rice with seasonal ingredients’) and main meat dishes for main meat eaters (‘shiizakana’).

Appreciate the elegant plating you have come to associate with Japanese cuisine? Do not miss out on ‘hassun’, the second course of ‘kaiseki’, which is lovingly plated to reflect the season in which you are having your meal. If you are looking for an unusual dish that could describe Japanese cuisine, we would say ‘hassun’ makes the cut. Despite being an appetiser, it is a dish featuring seasonal ingredients that reflect the season. The best things come in small sizes; Chef Yoshiyuki Kashiwabara’s artistry is placed on a square plate no larger than eight inches on each side. To show Chef Kashiwabara’s skill and dedication to seasonal flavours, 2017 features particular menus that pay homage to cultural festivals in Japan. April 2017 will see a sakura-inspired menu that brings to mind ‘Hanami’ or the Cherry Blossom Festival.

Why is Niigata prefecture synonymous with quality sake? It boils down to the high standard of rice grown in the prefecture and heavy filtration, which provides Niigata sake with a purified, refined taste. Sushi Mitsuya draws our attention to the iconic Japanese drink with a separate menu for it, reminding us of the status the French give to wines that accompany each meal. Decide if Niigata is the Bordeaux or Burgundy of the sake world by tasting ‘Kakurei Junmai Daiginjo’ or ‘Kakurei Daiginjo’.

The restaurant also holds an interesting story behind its name. Representing teamwork among the three restaurant partners, Sushi Mitsuya or “Three Arrows Sushi” is an example of strength in unity. Head Chef Ryosuke Harada serves up the carefully planned meals to 18 guests at the counter and six to eight guests in a private room. If you have ever wondered what edomae sushi means, Shoukouwa is here to provide answers. If we had a time machine, perhaps one of the stops to make would be to eat the original sushi made during the Edo period, which is where edomae sushi comes from. We can picture ourselves eating sushi alongside Japanese in the Edo period, made with freshly caught fish and ingredients gathered near the waterways. Who would have known that the high cost of keeping food fresh in that period would make such an exciting dining experience?

There are basically two reasons we would dine at Shiraishi: 12 years of experience and a seasonal menu. Owner and Head Chef Mr Shiraishi Shinji has been preparing and plating sushi for over 12 years. With such deep understanding of sushi, speaking with him about sushi tradition and tasting his creations must be greatly engaging. The regular revision and extensiveness of the seasonal menu also shows the Chef’s great passion for quality Japanese cuisine. Now that it is spring in Japan, bamboo shoot, seasonal vegetables and icefish are definite must-tries.

Shiraishi’s regular menu offers a lovely variety of ways to have your meal — edomae specials, a sushi-kaiseki course or a more elaborate sushi edomae (misaki) course with special tuna soup. Just when we were patting ourselves on the back for knowing a little about edomae sushi, the restaurant shares more.

Allow us to return to the pictorial representation of Japanese eating extremely fresh sushi by water ways. Add to this the fact that halibut, shellfish, sea eel, and of course, tuna were being caught and prepared while the food was eaten. Vinegar acts on the sushi as cooking agent, so food was consumed immediately. The best way to learn more about edomae sushi here is to converse with the chef while he prepares a meal for you ‘omakase’.

Here is something else we gathered from watching ‘Jiro Dreams of Sushi’: It is not easy being the son of a sushi master. Head Chef Kenjiro Hashida’s father is none other than Tokio Hashida, the maestro behind an acclaimed sushi restaurant of the same name in proximity of Tsukiji fish market in Tokyo. This means Chef Kenjiro Hashida has the privilege and great responsibility of doing justice to 30 family sauce blends and a secret sauce recipe, not to mention the other standards he would have to upkeep.

Hashida Sushi Singapore does not fall short in terms of dedication to the craft of sushi. Carefully thought-out details are everywhere. Elaborate tasting is not limited to wines; rice used at Hashida has to be selected premium rice that is pre-tasted. Rare sakes are served in carefully-sculpted sake cups created by Japanese masters. Your meal is plated on tableware that could date back to a hundred years old. Imports from Tsukiji come four times each week. Begin a conversation with the native Japanese chefs from Hokkaido, Kansai, specifically Kyoto, and Saitama, who are more than eager to share about the culture surrounding sushi. Again, the ‘omakase’ menu is a great conversation starter. Ask about the seasonal fruit that the chef has prepared for you — strawberries for Spring, perhaps?

Ginza Sushi-ichi

Tuna is the star at Ginza Sushi-ichi, and you would be missing out if you had a meal there without savouring it. As the only Ginza Sushi-ichi worldwide to receive one Michelin star, the restaurant places great emphasis on preparation of the key sushi ingredient, which they purchase from a tuna-focused vendor at Tsujiki daily. The other must-try dish is sea urchin, preparing lovingly from ingredients bought from the first auction each day.

Sushi deconstructed is a balanced proportion of the freshest catch prepared by an experienced chef, controlled temperature and pressure applied on top-grade rice, and quality rice vinegar that ‘respects’ the natural flavour of the topping. Each type of topping is accompanied by varied amounts of rice pressed at different temperatures. According to the Michelin Guide, Ginza Sushi-ichi even uses red or white vinegar depending on which best matches the topping, which makes an intriguing, high calibre dining experience. Over at the restaurant’s sake lounge, sample Suigei Sake Brewed at Kochi Prefecture or ask for recommendations among the 30 other sakes offered.

The first thing that strikes us about Ki-sho is the black and white exterior. While historically the building was home to colonial expatriates, there is something so apt about placing a Japanese restaurant in such an elegant, minimalist building — Japanese cuisine, as we have been charting, is about pairing right down to the essentials — namely ingredients — and bringing out their natural flavour, best when in season. Chef Hamamoto’s emphasis on seasonal dishes means the exterior matches the delicacies served. Alongside Ginza Sushi-ichi, Ki-sho is the place on the list to try sea urchin.

No other restaurant has stirred our interest in the specific seasonality of each ingredient like Ki-sho has. By influence of the restaurant, we sussed out the signature dish in Japanese cuisine for each season: firefly squids are best eaten in spring. Winter is marked by snow crab and ‘fugu’ or pufferfish; summer is heralded with ‘ayu’ or sweetfish, and autumn sees the arrival of sweet potatoes and matsukake mushroom soup. For a bespoke sake experience, speak to the two sake sommeliers at Ki-sho. They will introduce you to types of sakes not commonly served in Singapore. The restaurant imports only one bottle of each type of sake, which makes for a distinctive drinking experience each time.

Kuriya Dining

Yes, Kuriya Dining is not strictly a Japanese restaurant. The establishment offers authentic Nihon dishes, but a great treat is to try the fusion dishes the chef creates by bringing together Western influences and Japanese cooking techniques. Your trained eye might already have begun to notice the presence of firefly squid, icefish, and bamboo shoots on the April 2017 monthly menu. This is a sign that the restaurant’s emphasis on seasonality is similar to purely Japanese restaurants.

Apart from the monthly menu, the regular set lunch and dinner come with the option of adding on fresh sea urchin, grated Japanese Jinejo yam, typically used in soba, and marinated Salmon Roe. For some meat variant to the large amount of seafood and fish you have been consuming — albeit of great quality — choose the Kuriya Dinner Course. Australian Wagyu beef, and Kurobuta pork, which is the Wagyu of pork, are served to provide a truly satisfying meal. Located in a small, renovated bungalow, the decor is casual with some industrial elements and Japanese movie and anime posters lining the walls. A little background

I was in Japan 2016 for a short business trip. I couldn’t believe I was in Japan, the place where sushi was born. A bit picked up at various restaurants on offer, the sushi rolls were actually more of an American thing. Of course, the idea of ​​a sushi roll in Japan is as simple as nori, rice, and fish. But I wanted my Godzilla roll and I don’t think that’s a thing in Japan.

Anyway, in short, we were absorbed in Japanese culture and food trends and before we knew it, we only order sashimi and nigiri like the pros.So this is where our appreciation for fish and rice came to be.

Now by this time, we have had many different sushi restaurants. And has a good sense of what nigiri suggests to try and see how. And I really wanted to try yuzu.

Here is the breakdown:

Salmon, Zuke Sak, Albacore Buns, Super White Tuna Nigirya : 5 outside 5! Where should I start ?! The rice was just the right temperature with just the right amount of sweetness and astringency.The fish was given in a generous portion (As shown above). And right between the rice and fish, there was a bit of wasabi paste. This step is vital because it raises the flavor to a different level. Every time I took a bite, I sank into the seat, closed my eyes and gave my taste buds a full experience. The fish just melts in your mouth, that’s how good the fish was. crumbles, passed. They were all so good.

Dragon Ball Jumbo Rolls : 5 outside 5! Holy cow.The art that comes with land is unreal! Not only do they decorate your plate with some amazing art, the sushi rolls are delicious.

Uni shot : 5 outside 5! I, if you haven’t tried the Uni shot yet, I suggest you come try it here. This will definitely set the bar high. I am, of course, blown away by this shot. It went very smoothly and I honestly thought I was eating the icing from the pie just because it was super creamy.

Robata : 5 outside 5! I love these little skewers, they remind me of Japan.My favorite was the short rib beef. It was so tender and juicy, the seasoning was perfect and the taste was packed with punch. You really can’t go wrong with these little skewers, but the beef short ribs exceeded my expectations and was very enjoyable.

Final thought

Overall, my assessment of this restaurant is solid 5. This is the place where I would go even if I lived in a different state even of the country. The prices are pretty low and you can get a lot of food while keeping your wallet happy.I totally recommend coming here for lunch or dinner because you will not be disappointed!

Today our review concerns several sushi restaurants in the USA, we note that the most famous and appreciated establishments are Yasuda Sushi restaurants. We are talking about the chef and owner Yasuda-san, recall that recently the establishment was sold, of course, the original style of the former owner will be sorely missed, but we would like to expand our review of sushi travel and open some restaurants in the USA for you.

What to choose?

There are several places under this name that are worth visiting on a trip. First, if you are pretty much stuck in New York and Los Angeles and travel disappoints. I must say that many cities are already disappointing, including Seattle and other metropolitan areas. In fact, Daisuke Nakazawa (the chef mentioned above) worked for Shiro in Seattle. And the sushi there was disappointing and of poor quality compared to those offered in New York and Los Angeles.Secondly, because in practice, most cities simply cannot maintain top-quality sushi. There are also two establishments that have personally experienced:

  • Urasawa Restaurant (Beverly Hills, Los Angeles). Amazing, serene zen restaurant. Half of the menu is a variety of Japanese forge dishes (varieties of kaiseki), and the other half is sushi. It is a tiny place that is almost invisible from the street, except for a couple of signs in Japanese.The entrance to the establishment is quite easy to miss, it is located on the second floor of the house and is decorated modestly. The restaurant has just a sushi bar (10 seats) and a small table for complex serving. We were there for 4 hours, spent $ 375 and every penny here was worth it to come back for more. This is probably the best sushi experience we’ve had in Los Angeles.
  • Yasuda Sushi Restaurant (New York). Yasuda left here and opened a store in Tokyo, but the general mood from his sushi establishments in New York remained at a very good level.Be sure to sit down at the bar (you should call beforehand for reservations) and ask for the sushi chef omakase. Yasuda Restaurant is known for its wide range of inexpensive quality fish. On average, lunch comes out $ 120 for 20 pieces. The time spent in the bar is limited, the client cannot stay for more than 1.5 hours. We ordered only 38 pieces of sushi, everything was phenomenal.
