In the 1970s, they were serving delicious food at the Mattar Rd Hawker Centre without a signboard.

After selling the dish from a pushcart for a number of years, Madam Cher Ya and her husband opened Palm Beach Seafood in 1962 along Upper East Coast Road. Mellben Seafood is definitely your go-to when your crab craving demands to be satisfied. The chilli crab is pretty good, though we think the crab claypot bee hoon is the clear winner at this restaurant. From a humble stall along Commonwealth Avenue in 1979, the family-run Mellben Seafood has established itself as a well-known seafood destination in Singapore.

In 1985, founder Melvin Soon partnered with Benson to launch Mellben Seafood Catering Service. Today, their network has a total of 8 outlets, including Uncle Leong’s Seafood (Yeah, they are related).

Mellben’s Chili Crab is arguably one of the best in Singapore, served using large crabs in a thick, spicy and slightly sweet chili sauce. Level of spice can be adjusted according to your preference.

Their style of crab sauce is very starchy, eggy and gooey, ie a lot of sauce that you have more than enough to sweep your mantou.

I won’t say it was spicy, but had more sweet-savoury notes and quite well-balanced.

Crabs were thankfully fleshy and succulent-sweet, more substantial than some of the recent ones I tried.

Famed for its crab and seafood dishes, No Signboard Seafood had humble beginnings in 1970s when founder Mdm Ong Kim Hoi started a seafood hawker stall at Mattar Road Hawker Centre.

You often find tomato ketchup in other versions of the Singapore Chilli Crab, but No Signboard Seafood’s take is created with an own Peranakan-inspired recipe with herbs and spices. The recipe has been maintained over the years.

The Chilli Sri Lanka Crab with Macaroni is priced at $10 per 100g for medium crab, $13.80 per 100g for large crab, $128 for Dungeness crab.

What you get is a slurp-worthy and rather eggy version of the sauce, slightly on the sweet side and not too spicy.

Worthy of mention are the mantou which are larger than usual, no less crispy and still very fluffy on the inside.

Whether you’re a first-timer or a long-time follower of the TungLok brand, the TungLok Seafood Chilli Crab ($7.80 per 100g) comes recommended.

Aside from the fresh crabs with chunky and juicy meat, what makes this rendition unique is how the sauce combines tomato sauce and fresh-squeezed orange juice to deliver a distinct taste.

You would find that the sauce to be fruitier and even eggier than usual, and so makes it appetising yet not overly rich. The good thing is there is A LOT of sauce, so good that you can even have it on its own.

You cannot talk about Chilli Crabs without a mention of Roland Restaurant, known to be the creator of the iconic Chilli Crabs and mecca for crab devotees.

Of course, some other restaurants also do lay claim on that honours, but probably none has “The Year 1956 – Founder Of Chilli Crab” printed on the menu.

The Michelin Guide Singapore has also listed it with a “Michelin Plate”. (On a side note, Olympic champion Joseph Schooling is also said to be a fan of their crabs).

The recipe was created by Mdm Cher herself, and the original version had neither no eggs nor sambal, and served accompanied by mantou for dipping into the sauce.

Compared to most Singaporean seafood restaurants, their chili sauce was more red than orange, and its savoury taste mildly spicy and slightly sweet.

I really enjoyed their sauce, which had a luscious almost gooey texture and mildly-spice kick.

To be honest, I thought some of the other versions I tried had too strong ketchup sweetness which I didn’t really fancy. If I needed to nit-pick on something, I thought the crab meat could be juicier and chunkier. Roland Restaurant (Marine Parade)

Won’t be right mentioning about Chilli Crabs without a word of JUMBO Seafood. The brand has been well-known to be a tourist-favourite, and perhaps the first Chilli Crab restaurant that comes to mind for the international market.

JUMBO Seafood had humble beginnings in 1987, operating from a single outlet in East Coast Seafood Centre (now the flagship). It has currently 6 outlets in Singapore and 12 across Asia.

Their award-winning Chilli Crab contains live crabs drenched in a mouth-watering sauce containing a myriad of over 10 different Southeast Asian spices.

The sauce can be described a sweet sourness with subtle eggy fragrance that brings out the freshness of crab.

Diners can choose from Mud Crab (recommended, $9.80 per 100g), Dungeness Crab and Alaskan Crab.

Long Beach Seafood first started at Bedok Rest House (1946), a period when it was then one of the few restaurants that served local food. The Black Pepper Crab is apparently said to be a Long Beach creation.

I am not sure if the same applies to other seafood restaurants, but the service staff offered to help de-shell the chilli crabs and ‘dig’ the meat out for us.

Oh, clean hands.

Sure, it takes some of the ‘fun’ out of the struggling and licking, but this provides an easier and convenient way of having crabs.

The crab meat was elegant sweet and moist, and the sauce was rather eggy and had a spicier kick towards the end (in fact spicier than most of the average out there).

Helmed by the straight-talking Chef Elton Seah, he used to operate Holycrab as a private dinning concept for 7 years. The restaurant used to be located at Tan Quee Lan (Bugis) but has moved to Arcade @ Capitol.

The eponymous crabs (from Sri Lanka and Alaska) play a starring role in the menu, and they have interesting choices from Green Mumba (Green Chilli Crabs), OOoOtak which has Otak-inspried coconut curry, and Succumb on a charred bed of fine vermicelli.

The Singapore Chilli Crabs ($9 per 100g) turned out to be different from the normal ones, boosting a spicier-than-usual sauce that paired well with the sweet flesh of the crab.

The triangular shaped mantous ($4 for 5) are a must-have, deep fried to golden brown, crisp and fluffy. These are like your kong bak pau, and worked wonders with the chilli crab sauce as well. Holycrab (Tan Quee Lan Street)

On a side note, do you know Seafood Paradise originally at Defu Lane is Paradise Group’s first ever outlet?

I find Seafood Paradise’s rendition distinctly different from all others I have tried in Singapore – slight tinge to the spicier side.

The sauce had a fine balance of spiciness, sweetness and savouriness, all with a pleasurable, thick consistency, without overwhelming the natural taste of the succulent and fleshy crab meat.

Initially, my friends and I wanted to restrict the number of mantou buns to consume, but they were so fluffy, temptation craved in. So shiok to sweep across the sauce.

Keng Eng Kee which was once patronised by British Celebrity Chef James Martin and the late Anthony Bourdain, is one of Singapore’s most well-loved zi char place.

Owner Mr Liew who is Malaysian learnt his craft from his Hainanese father-in-law, and the eatery near Alexandra Village Food Centre is known for wide range of Cantonese-styled homely dishes.

Their recommended dishes include the Chilli and Black Pepper Crabs, and the crab dishes had the honours of being featured in Netflix’s highly-raved programme “Street Food”.

The Chilli Crab goes for $80/kg (before GST), and typically each crab here weighs 850g to 1kg.

The sauce here leans towards thick, eggy with a heavier tinge of tomato-sweetness, and considered not that spicy.

Interestingly, they do not sell fried mantou but the fluffy steamed ones work well too.

Sergey: About five tons. But this is not only Kamchatka crab, it is a combination of different species.
Ivan: This is really a lot. We didn’t expect to eat that much!
Sergey: We sell part of the crab in whole phalanges, part of it we disassemble for meat for dishes. Thanks to the very careful handling of the product, the percentage of waste is reduced, which, of course, also affects the price.

What specific features of working with a crab have you encountered?

Ivan: There are many nuances! For example defrost percentage. Or: thin – not thin. After all, you can buy just a shell, which will contain a little bit of meat.
Sergey: Everyone knows that the best crab is exported to Japan and Singapore. It’s simple – they buy for dollars, Russia for rubles. But we are working with prepaid vendors to bring this “Japanese” crab to our restaurant.
Ivan: Today we take what we think is the best crab.But crab is a seasonal product. Depending on the season, the temperature of the water, it sheds, loses weight – in general, an unstable product and therefore risky for a restaurant.

What are your bestsellers?

Sergey: Wine baba and toast with three types of crab. The portions are rather big: if it’s a crab, then a crab. We have a crab cake on the menu, its total weight is 150 grams, of which 135 are crab.
Ivan: We do not mix crab with shrimp or fish. We do not grind the meat with a machine, but with our hands we disassemble it into fibers so that people can see that it is really a crab, that it is not rolled into an incomprehensible cutlet mass.

Still, the crab is only one component of the concept of your new restaurant, the second is wine

Sergey: The crab made a lot of noise, but first of all it is a wine restaurant. We have eight hundred kinds of wine. And more than thirty suppliers.

Your guests will not receive a classic wine list, but tablets with a service program. At the same time, you did not refuse the services of a sommelier in the hall. How does the integration work?

Ivan: At least three sommeliers work per shift.Because you need to help guests understand these eight hundred labels. But we noticed a long time ago: many guests are afraid to communicate with the sommelier, they do not want to seem incompetent. In addition, there is still a strong prejudice that sommeliers are bred for expensive wine. People are more comfortable communicating with a tablet, at least initially. The program is made in such a way that you can choose a wine according to any parameter. Let’s say you like the vanilla flavor – a tablet will show all of our vanilla flavored wines.Very comfortably.

And should you only drink white with a crab?

Sergey: Exactly half of the menu is made up of crabs and crab dishes. The rest is a curtsey to the blame. We came up with dishes for red, pink, sparkling, champagne. We serve crab with red wine!
Ivan: We flew to Singapore on purpose to eat their black pepper crab. But when they returned home, they realized that it was wrong to feed the guests with Singapore-style Kamchatka crab just a stone’s throw from Red Square.And they came up with the dish “Crab with adjika”. Adjika perfectly emphasizes the sweetness of the Kamchatka crab. Tomatoes, garlic, chili-peppers, lots of aromatic greens … We sold about two thousand servings in a month! And for this dish we offer just red.

Do you often argue with each other?

Sergey: Always. It’s hard to work together.
Ivan: The problem is that there is a lot of flattery in our work. When the chef is told “delicious”, he begins to believe in it. But you need a person who will tell the truth, even if it is bitter.We always tell each other the truth, and this is very important.

I will ask an indecent question: what is the return on investment of a wine-crab restaurant you have laid down?

Ivan: Any restaurateur will say that forecasting in the restaurant business is a thankless task. After working the first month, we realized that such a pace suits us.

You opened only with a veranda – a hundred landings, the premises were still being renovated. How many guests were there per day?

Ivan: About four hundred – four hundred and fifty people.Minimum – three hundred and ninety, on Mondays.
Sergey: Do you know how many people try crab for the first time? We were very surprised. They praise our quality, and they are also pleasantly surprised by the prices.
Ivan: We also figured out how to determine the success of an establishment.People get up and go to sign up for tomorrow or the day after tomorrow. You can say whatever you want: tasty, tasteless, expensive, cheap, working, non-working model, but if the guest, after finishing dinner, asks to write it down for tomorrow, then he liked it.

So when will you raise prices?

Sergey: Oh, this is the most asked question now! We are not planning to raise prices.

Are you tempted to put some crab into the Twins menu?

Ivan: We wanted to make a radically different project, not a repackaged Twins.Wine & Crab and Twins should not be ideologically the same. It is important that today’s restaurant guests cannot be attracted by repackaging.
